Last night I was at my good friend’s house for another Karma Club meeting. I really need to tell you all more about our Karma Club sometime. In a nutshell, it is akin to a book club, but it involves inviting interesting practitioners and teachers to present to us. We’ve had a rockin’ cast of cool folks come, ranging from a Reiki specialist, an Ayurveda medicine practitioner, an astrologer, a nationally recognized medium, and an enneagram specialist. I can’t tell you how much I love it!
I’ll post specifically about last nights group in the next couple days. IT WAS SO AWESOME! We had so much fun we were up until 11:30, and that is flippin’ late for Dalai.
I brought these Date Squares for my friends to try and they were a big hit! Honestly, I was trying to get them out of my house because I couldn’t stop eating them. They are adapted from a recipe from Oh She Glows (original recipe here). You will not be disappointed!
Gluten Free No Bake Vegan Date Squares
Crust
- 1 1/2 cups whole raw almonds
- 1 1/2 cups gluten-free oats (or regular if not an issue)
- 1/2 teaspoon kosher salt
- 10 Medjool dates (pitted and chopped) or 12 whole mission figs (soak for 10 minutes)
- 1/4 cup coconut oil
Filling:
- 25 Medjool dates (pitted and chopped) or Mission Figs (chopped)
- 1/2 cup water
- *2 teaspoons honey for figs optional if need extra sweetness
Directions:
Line 8×8 square pan with parchment paper. In a food processor, process almonds, salt, and oats until crumbly. Add the dates or figs until processed again. Melt the coconut oil and slowly add to mixture and process until moist. You may need to add a bit more, but don’t want it too “wet”. Remove from processor and divide: set 3/4 cup of mixture aside for topping!
Press all but 3/4 cup into pan firmly.
Process your 25 dates or figs in the processor and slowly add the water until a paste. It will stick to the sides so you will have to scrape down. Spread the mixture on the crust. Here I tried to do half and half (fig and date) to satisfy all my kids. It was a little difficult to process since there wasn’t enough “stuff” to catch the blades of the food processor, but we made it work!
Sprinkle with the reserved 3/4 cup crust mixture (press it down with your hands)
Refrigerate a couple of hours before cutting. Keep in refrigerator or freezer! These will blow you away!
